    I'm writing up the list of groceries for tomorrow, will be making homemade baked ziti with fresh Buffalo mozzarella and marinara sauce. Looking forward to it, it's one of my all time favorite Pasta dishes. Ever had ziti?

    I'd want something with good whole grain pasta (never mind I don't know of any)
    and lots of veggies , plus the cheese and pom sauce, of course.

    I'm a big fan of homemade Alfredo over angel hair. I can whip up an Alfredo sauce in minutes. Melt the better, add some fresh garlic (don't fry it!, just let it absorb into the fat), add some flour for a roux blanc (again, don't fry it!), stir in some milk, simmer (on the edge of boiling) then whisk in the parmesan.

    Before I lived here, I'd get the fresh grated stuff from the market I shopped, and some fresh made pasta (West Side Market, Ohio City Pasta in Cleveland, Ohio).

    I'll either steam some broccoli florets and slice grilled chicken breast, boil and shell shrimp, or sear some sea scallops (or both shrimp and scallops).

    Also when the tomatoes are ripe I'll make up some putanesca and can it.

    I haven't had it in years. My mother avoids making it given how fattening it is. Personally I've always loved Fettuccini Alfredo..but that's not a health food either...

    Generally, a spaghetti sauce made with meat substitute, olives, onions, tomatoes, bell peppers, and heavy on Italian seasoning. I usually, but not always, use whole grain spaghetti. And a side of garlic bread.

    Light Cream, NOT milk.

    I make the sauce by:
    melting 1 stick of sweet butter in a sauce pan
    Add garlic, sautee on low for a few minutes
    Add about 1 cup of Light Cream till fairly hot ( as above )
    Add about 1 cup of grated Parmesan - wisk in till thickened...
    Pour over pasta ( I also like 1 lb of Angel Hair ) and stir until well coated.

    I’m in the middle of a diet and exercise plan (lost almost 20 lbs already!) and THIS is NOT helping!!!! :mad: :D

    My fav is Spaghetti Carbonara. But I gotta say a good layered lasagna made with a béchamel and some chicken liver mixed in with the ground beef knocks it out of the park too!

    @Tone Deaf This is my "healthy" recipe for Alfredo.

    Thickens up just fine and doesn't lose any flavor...
