Both these are, give or take, the same price. One is an expensive instrument, the price usually justified by the build quality and design, built with, allegedly, no strict limit on cost. The other is a relatively straight forward guitar built from essentially a combination of screw together parts. It's CS status awarded by some extra attention to assembly detail and hand finishing.

So, which is the better value and why is the Strat so expensive compared to it's MIA 'normal' stable mates?

You are here
The better value is the guitar that does exactly what you want for the least investment so the answer can be different for each person. Fwiw, I've always thought bolt neck guitars were expensive given what they are compared to the work that goes into making a Gibson or PRS. That doesn't mean I don't love my Strat.

< The one on the right is a CS 60th Anniversary...
If the one in the ad fetches the asking price, it'll have made 3 grand in 3 years - FWIW, I doubt it will - so I'd say that's better value, if it was to keep appreciating at that rate.
In terms of which is the better guitar, again, it's the Les Paul... Sorry, it just is.

If you haven't got the dough, the Explorer is better value.

Best value is a hard one with the Les Paul over the Gilmour. The Gilmour has already tripled its value, well the relic version has. I’m sure the price has come down by now.

Both being used and both I think are very desirable to collectors. Bolt on versus set neck isn’t really a consideration with these two because I mean it’s a Gilmour strat. They will both hold value. I’d rather have the Les Paul just because I don’t like the neck on the Gilmour. If I was a collector though I’d go for the Gilmour.
