My opinion is that food is out of date when it starts to smell funny or when there's stuff growing on it. My findings this far with regards to how long past the expiration date different foods are still good. By good I mean good, not just edible.

    Opened milk: a week

    Unopened milk: two weeks

    Meat: a week

    Raw fish: two days

    Whole raw chicken: three days

    Bacon: at least a month

Canned food: depending on type but at least a year

Eggs: a month in the fridge, one to two weeks in room temperature

Cheese: indefinite, just cut off the fur

Your nose will tell you what's good and what's not. If it smells good then it is good, always.

Surströmming and cheese may smell bad but are still good :)

It smells aweful. It doesn't taste as bad as it smells but it's not great. It's an old tradition, mostly up north. Surströmming used to be a staple food in the old days, it was a way of preserving the fish.

They actually did tests on it a couple of years ago to determine the contents, it's very, very clean. No bacteria survives the process.
