    Oh yes, Hot Dog Johnny’s on Rt 46! Thats one busy place, I was there last about 2 years ago.

    I used to go there once in awhile when I would do work in the Hoffmann La Roche plant in Belvidere ( also the Log Cabin, too!)

    Durkees is really rather different from mayo. It's tart & tangy and a little bit spicy, with just a tiny bit of creaminess. Doesn't have the oily mouthfeel of mayo, I think partly because of the vinegar and partly because you don't need to use as much.

    I've had cooks confess to me that when they get an order for a steak "well done" that they select a cheaper cut of meat for that order. Their reasoning is "they don't know what good meat tastes like--why waste the good stuff on them?".

    Relish. The only true condiment. All other condiments are posers. Relish should also replace the bun. A hamburger with relish. A hot dog with relish. There is nothing else to life. Pre-Big Bang, there existed the singularity with relish on it. Nothing else. ;)

    Soy sauce, maybe some wasabi...Shoga (pickeled ginger) and when some kick is needed, Ra-Yu ... a red pepper oil that'll curl yer toes but bring ya back for more (it's really La-Yu but spouse has a little difficulty with 'L' sounds sometimes and it often comes out more R than L).

    Good stuff.
