My 2018 Fiesta Red American Special Stratocaster. Love the color.
I certainly wouldn't write off Squier CVs, every one I've played has been fantastic.
With all these great looking FR strats being shown.....I gotta post mine...

My Fiesta Red California Series. I need a better picture, it looks lighter than that in person.
Red with maple is a great look.
I had a Fiesta Red, Hot Rod 50s Strat I just traded away. Great guitar! Although I prefer rosewood with FR.
This, right here. A Squier CV 50s Strat is quite good. It's basically 50s spec, but for 9 1/2" radius, medium jumbos, and a poly finish. They sound, play, and look good. They need nothing but a setup to be that way.
Here’s my oddball - E4 Strat Plus with split Wilkinson nut. Almost like new but a previous owner removed the bridge gold Lace and put in a red one.
Like some others here would definitely suggest checking eBay for a MIJ model if you're interested. I've got several of them, they're imo a great high quality guitar for around the price of an American standard. Specifically I would speak very highly of anything from the hybrid series (these will be satin finishes on the neck though not gloss, idk if that is important). The hybrid series is supposed to be the Japanese equivalent of the American professional series and only available on the Japanese market. I've been buying them on eBay though for a few years now (search: fender Made In Japan Fiesta Red) they are imports and I'd ask for EMS shipping if you go that route. Absolutely great guitars though.
Other than that, I've got a MIM classic series just like this and you could try to find a used one or Warmoth is completely viable and probably fun and educational as well.

Here's my California Series FR, but I've got a Player Series neck on it now:
I’ve found one California Series in Fiesta Red, but it has a Pau Ferro Fretboard. The price seems reasonable. So the question is do I jump on this one or wait and hope a maple fretboard comes along? I don’t dislike Pau Ferro, I have several, but I just like the combo of FR and Maple . . .
You can always swap necks (which is what I did).

California Series strats didn't come with Pau Ferro fretboards. Only Maple or Rosewood. If the neck has Pau Ferro, then it isn't original. Many are trying to sell non-original ones for the prices stock ones go for. You want to show us some pics of this? How much are they asking?
My mistake! It is Rosewood. It has the correct S/N prefix.

I'm still undecided on the Maple Vs Rosewood . . . I really like Maple both from an an appearance and playing perspective.
The corrosion on this one is a little bit of a negative, but otherwise I think it looks pretty good!
Just got the neck for my hard tail fiesta red project. Just gotta get some hardware and swap the pickups in the loaded roadworn pickguard with the Joe Bonamossa pickups this project is centered around
