Very timely post, given the proximity to Halloween. I'll explain. Many years ago I dated a gal who had a brick stairway with built up sides on her front porch. For Halloween she challenge me to do competing jack-o'-lanterns to set on opposite sides of the porch so that trick or treaters would have to walk between them on the way in. For mine, I purchased a small, (but still large), calf tongue. The I rolled it up, put toothpicks in it to hold it rolled up and put it in the freezer overnight. Come trick or treat time on halloween, around dusk, I set the tongue into my jack-o'-lantern. It being cool at night that time of year, over the course of a few hours the tongue defrosted slowly and grew longer and longer. Naturally, kids being what they are, they had to touch it on the way up...the reactions of them, and their handlers was a thing to behold. "ewww..it' real!!" When asked about it, I simply told them it belonged to one of the trick or treaters who asked too many questions...
Yes! There's a few taco stands around here that offer it, and its pretty tasty. I dont know if I would do a whole tongue in a dutch oven like a roast, but what I've had has been good. I do remember seeing tongues in the grocery stores alongside the other meats like tripe.
The inside can be quite good... But grilled Not so sure... Make it tough... We had it often when we had our farms 40s N 50s But Here's what I really remember... The skin is great bait... Sunnies N Bass could not get it off the hook... Fish an entire entire hour with one strip.... Eating Ma would pickle them... Quite like pork knuckles n feet.... Nothing wrong with tongue... If ya kill it Ya better eat it...
I've eaten it before when I was a kid. It's the toughest meat around, almost impossible to chew. Maybe if it was tenderized properly?
unless it's boiled, it needs to be sliced paper thin - then it is tender and delicious. I don't care whether you call it lengua and put it in a taco or tongue and put it on rye bread with mustard; my answer is "yes, please!"
It's not bad but yeah, the mouth feel of the taste buds can be a bit off putting for some. It's meat. No more gross than eating any other cow flesh.
It's all one huge muscle, no fat. Just lean meat. Cook it the way you'd cook lean meat and the result will be delicious.
i have never enjoyed biting my tongue figuratively or litteraly so i will not bite on another unless i'm starving! and my apolagies for the times i did not but should have...
