I agree. They look like baby-vomit to me. I once did a poll on the now defunct Fender Lounge forum hoping sanity would prevail but alas the fugly mint guards won the poll. I had no idea there were that many people who preferred baby-vomit.Never liked the fake “Mint” look….

Tough choice, but personally I'd keep it original. I LOVE Mint Green finish.

It’s also the official name that Fender calls this shade. It’s a little more muted than their “white.” They even print EBE for eggshell black eggshell on the sticker. It’s also the outside covering of an egg.Eggshell is a descriptor of sheen level.
Like flat, matte, eggshell, pearl, satin, semi-gloss, full gloss.
You’re Stat and Tele are opposites.That's a tough choice. I built a Tele in oly white and went with a bright white guard. Mine looks a bit yellower than yours though.
I did white Strat with a bright white guard but just swapped on a very aged white guard. So many combinations look good on white.
Of the three choices that you list I think I'd go with the mint for the contrast.

The reason I was going with one of the eggshell guards is that it’s the one used on the AV and AV II 1965s and on most real 1965 StratsWhite !!!!
Mint on sunburst looks amazing.I like mint green but find the mint green used on most is too mint. More subtle it should be.
Another example, like the orange necks and dark clay dots- of manufacturers mixing elements that are brand new with elements that appear old. It looks odd to me.
Mint green should look like this on new guitar imo.

On older guitar it can be mintier but looks out of sorts when overly minty and new.
